1. Place the noodles in a pan, cover with boiling water and leave for 15 minutes then drain and allow to cool.
2. Prepare the vegetables: chop the bottom off the pak choi and separate the leaves, chop the coriander, trim the beans and finely slice the peppers and onion
3. Heat the sesame oil in a wok, fry the vegetables on a high heat until they are tender crisp
4. Combine the vegetables, noodles, sweet chili sauce, sesame seeds and half the coriander. Garnish with the sweet soy sauce and the remaining coriander. Serve cold and enjoy
