Your shopping list
- 4 Eggs
- 100g Unsalted butter
- 25ml White wine vinegar
- 1 English muffin
- Small pack of smoked salmon

The method
Hollandaise sauce
1. Take two eggs and separate the yolks from the egg whites.
2. Melt the butter in a pan and then transfer to a jug and set aside.
3. Place the two egg yolks, and 1tsp of white wine vinegar, into a metal or glass mixing bowl. Whisk over a pan of simmering water until the yolks thicken. To test this is the right consistency, pick up the whisk and draw a line of mixture on top of itself. If this holds, the egg yolks are cooked.
4. Slowly incorporate the butter into the egg mix, season with a little salt, and set to one side.
The eggs
1. In medium saucepan bring the water and 20ml of white wine vinegar, to the boil.
2. Crack the two remaining eggs in separate containers so it’s easy to tip them into the boiling water.
3. Boil the eggs for approximately 3 minutes, then scoop out, and carefully place on kitchen roll.
4. Use a sharp knife to remove any strings from the eggs.
Assembly
1. Cut the muffin in half length ways and toast under the grill or in a toaster.
2. Place the muffin onto the plate and add the smoked salmon.
3. Place the eggs gently on top of the salmon and spoon over the hollandaise sauce, sprinkle with black pepper to finish.
