A wonderful, vibrant summer salad deserves a delicious homemade dressing so we asked our Executive Head Chef, Sean to share his favourite recipe!
Our tangy black raspberry dressing is served with our vegan power bowl and is a very popular choice in the spa restaurant. The black raspberries add a splash of colour and are high in the antioxidant anthocyanin.
This dressing is based on a simple vinaigrette. For the base, Sean uses a light rapeseed oil known for it’s health benefits. Rapeseed oil is abundant in Omega oils and vitamin E and is low in saturated fats.

Black Raspberry Dressing Recipe
Black Raspberries 30g
Dijon mustard 8g
Rapeseed oil 140ml
Balsamic reduction 10ml
White wine vinegar 15ml
Agave syrup 8g
Power bowl recipe
Combine chargrilled sweet potatoes, mixed quinoa (black, white, red), sorrel leaf, baby spinach, lambs lettuce, avocado diced with lemon juice, toasted Brazil nuts, goji berries and toasted black onion seeds.
