Shopping list
280g self-raising flour
2 lemons
4g baking powder
Pinch salt
4 eggs
280g sugar
20ml rum
120 g melted butter
80ml single cream
130g icing sugar
1. Zest the lemons
2. Combine the lemon zest, flour, baking powder and pinch of salt
3. Whisk the sugar and eggs in a mixing bowl
4. Add the rum, butter and cream to the whisked mixture
5. Add the dry ingredients and mix well
6. Pour into a prepared 8 inch cake tin and bake at 160 for 45 – 50 minutes
7. Leave to cool on a wire rack
8. Mix 3 tbsp lemon juice with 130g icing sugar and ice
9. Enjoy – Perfect with a cup of Earl Grey Tea!
